Grilled Veal Chops with Horseradish-Herb Butter

The tender, milk-fed veal loin chops you’ll find at our butcher counter are an exquisite ingredient on their own. But when you give them a quick marinade, grill them, and top them with a dreamy horseradish-herb butter, the results are pure magic. Savory. Juicy. Rich. And ready to impress on your table.
Ingredients
For the Horseradish-Herb Butter:
- 1.5 cups soft fresh herbs (parsley, tarragon, chives, basil, or your favorite herbs)
- 1 oz. finely grated fresh horseradish
- 6 oz. unsalted butter, softened
- 1 Tbsp. red wine vinegar
- Zest of one lemon, plus 1 tsp. lemon juice
- Salt and pepper, to taste
For the Veal:
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. Dijon mustard
- 2 garlic cloves, chopped
- 1 tsp. ground caraway seeds
- 2 tsp. smoked paprika
- 1 Tbsp. fresh thyme leaves, stems removed
- 4 veal loin chops
- Salt and pepper, to taste
Instructions
- Preheat the grill on high heat.
- Prepare the Horseradish-Herb butter: Place all the ingredients in the base of a food processor or blender. Add salt and pepper. Purée until smooth and bright green. Place in a small bowl and prepare the veal chops.
- Prepare the Veal Chops: In a medium-sized mixing bowl, place the extra-virgin olive oil, Dijon, garlic, ground caraway seeds, paprika, and thyme. Mix until smooth. Coat the veal chops with this mixture, move to a sheet-pan or casserole dish, and set aside to marinate for about an hour.
- When ready to serve, season both sides of the veal chops with salt and pepper and grill them for about 5-6 minutes on each side, or until desired doneness.
- Just before serving, top each chop with a healthy spoonful of the horseradish-herb butter.
